Ingredients:
2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons cardamom powder
1 tablespoon cinnamon
1 and 1/2 sticks of unsalted butter (melted and warm, but not hot)
1 cup packed brown sugar
1/2 cup granulated sugar
1 egg plus 1 egg yolk
2 teaspoons vanilla
1 cup chocolate chips (semisweet, milk, dark, etc)
1/2 teaspoon baking soda

Instructions:
1. Mix butter and sugars until completely blended.
2. Beat in egg, yolk, and vanilla until combined.
3. Add baking soda, salt, cardamom powder, and flour until combined. Stir in the chocolate chips.
4. Roll a heaping tablespoon of dough into a ball. Then, using both hands, pull the ball into 2 equal halves. Join the halves together again at the base to form a ball, but do not smooth the top of the dough ball. Place the dough ball (jagged surface up) onto an ungreased baking sheet. Repeat and space cookies about 3 inches apart (these cookies expand and grow like crazy!).
5. Bake for 15 to 18 minutes at 325 degrees until the cookies are a light golden brown and the outer edges start to harden. The centers should still look puffy. Cool the cookies completely before cooking so that the cookies can properly set.

PS I added coconut into the cookies in the photo above. I do not think it added much towards flavor or texture. Hence, I dropped it from the recipe!
