4 overripe bananas mashed (a little less than 2 cups mashed)
1/4 cup applesauce
2 tablespoons flax seed powder
6 tablespoons water
1/4 cup cinnamon
2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup chopped dried apricots
Sesame seeds for topping

Instructions:
Following these instructions exactly will provide the best results.
1. Mix flax seed powder with water. Let sit until gummy. This is how you substitute an egg so waiting is key!
2. In a different bowl, mix flour, baking powder, baking soda, salt, cinnamon, and chopped dried apricots.
3. Once mixed, add the banana, applesauce, and the flax seed egg made in step 1.
4. Mix well, but do NOT add any more water. I recommend mixing with your hands.
5. Pour into a greased loaf pan. This is the only time I used a few drops of oil. Decorate top of loaf with sesame seeds.
6. Bake for 50 to 55 minutes at 350 degrees. A toothpick should come out clean and the crust should be golden.
7. Let the bread cool down completely. Use a plastic knife to make sure edges separate from pan. Flip over and cut with a serrated bread knife. Do not try this with hot or warm bread!!
