1/2 cup unsalted butter (or coconut oil) ideally at room temperature
1/2 cup brown sugar
1/3 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup graham cracker crumbs (3/4 of a pack crushed)
30 to 40 Hershey Kisses (or a vegan alternative)
1 10 oz bag of large marshmallows cut into halves (vegan if you so choose: my favorite is Dandies)

Instructions:
Following these instructions exactly will provide the best results.
1. Beat butter, brown sugar, and sugar together until creamy. This may take a few minutes with a hand mixer and even longer if done by hand.
2. Add in the egg and vanilla extract until combined. Do not over-mix.
3. Add in the flour, baking soda, and salt until combined. Then, gently mix in the graham cracker crumbs.
4. Roll about a tablespoon worth of dough into a ball. Place on an ungreased cookie sheet and gently press down so that you get a slightly flattened circle. Place cookies about 2 inches apart.
5. Bake for 6 minutes at 350 degrees. Remove from oven and place a half marshmallow on top of each cookie (sticky side down).
6. Place cookies back into the oven at 350 degrees for another 2 minutes (until the marshmallows are puffy, but not yet golden). Stay near the oven as this process goes very fast!
7. Remove from oven and lightly press a chocolate kiss on each cookie.
